Description: This workshop is designed to help students explore ways to maximize their nutrition and eating habits. The curriculum of this workshop will be sensitive to the college student budgets and cooking potentials. We will spend 2 days in the Hampshire farmhouse kitchen doing demos of easy, inexpensive and healthy meals. We will also create healthy, well balanced SAGA menus. The curriculum will include a nutrition primer, discussing proteins, carbohydrates and fats. Relevant biochemistry and physiology will be emphasized. Students will learn how a balanced blood sugar contributes to better concentration/memory, stable moods, more energy and optimal sleep. We will have group activities in which we will challenge the popular beliefs surrounding how much and what types of foods to eat. We will explore popular diets that many students experiment with, such as vegetarianism, veganism, Paleolithic diet and low fat diets, and discuss the health benefits and consequences of each diet.
